Overview
Fergie reached out for help with marketing and sprucing up the pub’s menu. During our first meeting, we determined that there was a significant opportunity to analyze costs too.
Approach
The first thing we did was re engineer the menu, including costing, pricing, and presentation. We identified and positioned the Winners and eliminated the Losers. Then, we went to work in the kitchen on documenting recipes and portion control. Next up, new technology. We implemented a new POS system and set up Quickbooks in the office to keep a better eye on profitability. Once the foundation was in place, we started a social media campaign to generate interest in event space upstairs, new beers on tap, and weekly specials from the kitchen.
Results
Within six months, sales were up 22% and gross profit was up 28%.
